2 cup diced potatoes

1 tbsp olive oil

¼ tsp salt

¼ tsp black pepper

4 ct eggs

2 tbsp chopped green onions (optional)

1 tbsp ketchup (optional)

1 tbsp mayonnaise (optional)

1 tsp hot sauce
Directions
- Heat olive oil in a skillet over medium heat.
- Add diced potatoes, salt, and pepper.
- Cook until crispy and golden, about 10–12 minutes.
- Make small spaces in the skillet and crack eggs into them.
- Cover and cook until eggs reach desired doneness.
- Add small amount of ketchup and mayonnaise on the side.
- Sprinkle with green onions and hot sauce and serve immediately.
