Bulgogi Beef Bowls

Ingredients

  • 1 lb ground beef
  • 1 cup Jasmine Rice
  • 4 tbsp Brown Sugar
  • cup Soy Sauce
  • cup Sesame Oil
  • 2 tbsp Garlic (minced)
  • 2 tbsp Ginger (minced)
  • 2 ct Soft-boiled Egg

Directions

  1. Start the rice. This is usually the longest part, so set up your rice cooker or get a pot of water boiling stat so you aren't waiting!
  2. Make the sauce. Combine the soy sauce, sesame oil, ginger, garlic, and brown sugar and whisk. Set aside.
  3. Brown the ground beef in a skillet over medium-high heat for about 5 minutes. The meat will still be a little pink. Add the diced bell pepper, add the sauce, and simmer for another 5 mins.
  4. While the meat is cooking, get a pot of water boiling with just enough water to cover the surface of an egg. Once boiling, add the eggs and set a timer for 5 minutes. Prepare an ice bath in a bowl with ice and water. When the timer goes off, use a slotted spoon to extract the eggs and deposit into the ice bath. Let cool for at least five minutes for easy peeling.
  5. Serve the finished beef over rice and add a soft-boiled egg over top.
  6. Enjoy!
