Directions
- Preheat oven to 400°F (200°C).
- Toss potatoes, carrots, and onions with olive oil, salt, pepper, and garlic powder.
- Spread vegetables on a baking sheet and roast for 20–25 minutes until tender.
- Meanwhile, heat a skillet over medium-high heat.
- Season steak with salt and pepper.
- Sear steak for about 3–4 minutes per side or until desired doneness.
- Let steak rest for 5 minutes before slicing.
- Serve steak alongside roasted vegetables.
