Ingredients

3 ½ oz Rice noodles

3 ct Large eggs

8 oz Chicken, shrimp, beef or tofu(extra firm) all cooked

5 oz bean sprouts

3 tbsp Ground peanuts

3 tbsp vegetable oil

3 ct Green onion sliced medium thick

4 ct Thinly sliced baby carrot
Directions
- Cook rice noodles per directions on package Remove from boiling water and run under cold water Then spray with vegetable oil and put aside
- Add butter to wok and scramble 3 eggs
- Add onions, bean sprouts, carrots, rice noodles and protein to eggs and stir fry until all is cooked
- Sprinkle ground peanuts over the top and serve
