Ingredients

  • 3 ½ oz Rice noodles
  • 3 ct Large eggs
  • 8 oz Chicken, shrimp, beef or tofu(extra firm) all cooked
  • 5 oz bean sprouts
  • 3 tbsp Ground peanuts
  • 3 tbsp vegetable oil
  • 3 ct Green onion sliced medium thick
  • 4 ct Thinly sliced baby carrot

Directions

  1. Cook rice noodles per directions on package Remove from boiling water and run under cold water Then spray with vegetable oil and put aside
  2. Add butter to wok and scramble 3 eggs
  3. Add onions, bean sprouts, carrots, rice noodles and protein to eggs and stir fry until all is cooked
  4. Sprinkle ground peanuts over the top and serve
