4 ct large egg

1 cup diced potatoes

½ cup shredded cheddar cheese

¼ cup diced onion

1 tbsp olive oil

¼ tsp salt

¼ tsp black pepper

4 ct large flour tortillas

½ cup salsa

¼ cup chopped cilantro (optional)

1 ct Avocado
Directions
- Heat olive oil in a skillet over medium heat.
- Add diced potatoes and cook until tender and golden, about 8–10 minutes.
- Add diced onion and cook until softened.
- In a bowl, whisk eggs with salt and pepper.
- Pour eggs into the skillet and scramble until fully cooked.
- Warm tortillas in a dry skillet or microwave.
- Divide egg mixture among tortillas and top with cheese and salsa.
- Dice and scoop avocado and add on top of other ingredients
- Roll tortillas into burritos and serve warm.
