  • 4 ct large egg
  • 1 cup diced potatoes
  • ½ cup shredded cheddar cheese
  • ¼ cup diced onion
  • 1 tbsp olive oil
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 4 ct large flour tortillas
  • ½ cup salsa
  • ¼ cup chopped cilantro (optional)
  • 1 ct Avocado

Directions

  1. Heat olive oil in a skillet over medium heat.
  2. Add diced potatoes and cook until tender and golden, about 8–10 minutes.
  3. Add diced onion and cook until softened.
  4. In a bowl, whisk eggs with salt and pepper.
  5. Pour eggs into the skillet and scramble until fully cooked.
