2 ct salmon fillet

1 cup broccoli florets

1 cup brussels sprouts, halved

1 cup sliced carrots

1 tbsp olive oil

½ tsp salt

½ tsp black pepper

1 cup cooked rice

1 tsp lemon juice
Directions
- Preheat oven to 400°F (200°C).
- Toss vegetables with olive oil, salt, and pepper.
- Spread vegetables on a baking sheet and place salmon fillets alongside them.
- Roast for 15–18 minutes until salmon flakes easily and vegetables are tender.
- Serve salmon and vegetables over cooked rice.
- Drizzle lemon juice over the salmon before serving.
